Kaynaklar: an organic heaven - There are so many spots throughout Anatolia which remain relatively unknown. One of these is the village of Kaynaklar, near İzmir. This little village is very far removed from the holiday centers of the Aegean city of İzmir.

Kaynaklar takes it name from the waters that flow from local springs (kaynak itself meaning spring). The village, located at the base of Nif Mountain, boasts a wonderfully cool climate. If you head in this direction one day, make sure you get a chance to enjoy the food served at eateries such as the Papatya Kahvaltı Bahçesi, the Konyalı Bacılar or the Çitlenbik Gözleme Evi. After eating, head for the center of the village to sit in the shade of the centuries-old sycamore tree there.

Papatya Kahvaltı Bahçesi, a breakfast spot, has been set up in the garden of a village home. The scent of flowers and the sounds of local birds accompany the breakfast served here in the garden. Everything at the breakfast tables in this spot run by Mustafa and Ümit Tel is homemade.

The two women behind the Konyalı Bacılar Gözleme Evi are Sultan Tutum and Seyhan Şevik, and their homemade stuffed dolma, mantı and various treats, such as filled çörek, are all delicious. Sultan and Seyhan are actually a mother and daughter-in-law, and they have been cooking the food served up here for the past three years. They explain, “Well, we were doing essentially the same thing at home, so we thought that we should at least make money from our efforts.”

Another place in the village of Kaynaklar that begs to be tried is the Çitenbik Gözleme Evi. This spot has been run by couple Mukaddes and Şenol Dedeoğlu for the past eight years. Mukaddes Hanım explains: “Our food menu changes every day. We have so many dishes, from eggplant kebabs to köfte and potatoes cooked over the fire, or karnıyarık and lots and lots of different kinds of pilav. And of course, we always have churned ayran on hand, too.”

Eat knowing the full goodness of the food here. Your breakfast has been prepared in the garden of a village home, your fresh gözleme are straight out of an earthen oven and your tomatoes are plucked from the garden below. The very simplicity and sincerity of the service and style you will encounter here is bound to transport you back to earlier times. And of course, there is something always so memorable about eating while sitting on large cushions, whether for breakfast or dinner.

Çitlenbik Gözleme Evi: Not only can you find every kind of çörek imaginable here, but the breakfast menu is also quite rich. A single gözleme is TL 2.5, breakfast is TL 7.5. Konyalı Bacılar Gözleme Evi: Mother and daughter-in-law Sultan and Seyhan Hanım prepare special homemade gözleme for their customers at TL 2.5 each. The price for breakfast per person is TL 8. Soups and main dishes change on a daily basis. But don't forget that gözleme and mantı are the main attractions here. (0531 681 62 74)

Papatya Kahvaltı Bahçesi: This spot boasts a menu with organic everything, from the tomatoes to the peppers to the jams and jellies, from the honey to the cream that you will be served. Be prepared to watch as a hen and her chicks walk past as you eat, though -- remember, you are in a village garden. The price for breakfast ranges between TL 7-10 per person. (0212 428 24 00)

Historical sycamore tree 30 meters tall

There is one sycamore tree in the center of this village that is nearly 1,000 years old. Many years ago, a Greek scientist determined that sycamore trees could live to be 4,500 years old, and though the local villagers find this unlikely for their tree, studies done on Kaynaklar's historical tree show it to be around 980 years old. The tree is 30 meters tall, 4 meters in circumference and 1.5 meters in diameter.
