Kaburgacı Mehmet Usta, a restaurant in İstanbul’s Maltepe neighborhood, has fixed menus that may at first frighten people. Even though kaburga dolma, or stuffed ribs, is regarded as one of the heaviest meals in Turkey, Kaburgacı Mehmet Usta has a secret, allowing him to make quite a light meal instead.
Mehmet Demir, the restaurant’s owner, previously served people in İstanbul’s Erenköy neighborhood, but recently moved his restaurant to Maltepe, where it quickly became one of the most popular restaurants in the area. It is located near the E-5 highway.
Kaburgacı Mehmet Usta puts the classic kebab menu on the backburner, focusing on meals such as sac tava (a fried stew), kaburga dolma and tandır kebab (made in a clay oven). Definitely try the içli köfte (meatballs in bulgur wheat), salad with nar ekşisi (pomegranate vinegar) and irmik tatlısı (semolina dessert) with ice cream here.
Kaburga dolma, a dish from Diyarbakır province, is one of the most difficult meals to make. However, Kaburgacı Mehmet Usta is one of the better places to try this because they cook it well. Demir says they cook the meat for kaburga dolma in an oven for approximately six hours. You can try this heavy, serious meal that has been prepared with a light twist.
You can select a fixed menu or only kaburga dolma, sac tava or tandır kebab in the restaurant, which can accommodate some 120 customers. I can easily say that each of these dishes is very delicious. Furthermore, even though the price of meat has increased, the restaurant has retained its prices from last year. The restaurant has a parking lot, a prayer room (mescit) and a clean kitchen that is always open to customers wanting to take a peek. Undoubtedly, this increases trust between the restaurant and its customers. Kaburgacı Mehmet Usta is open every day from 12 p.m. until 11 p.m. and is planning to open branches in İzmir, Kayseri, Eskişehir, Diyarbakır and İstanbul’s Ataşehir neighborhood soon.
The kaburga dolma fixed menu includes stuffed ribs, içli köfte, irmik tatlısı with ice cream, ayran (a drink made by diluting yogurt with water) and salad, while the sac tava fixed menu includes a stew, içli köfte, irmik tatlısı with ice cream, ayran and salad.
İrmik tatlısı a good choice after kaburga dolma
Come to this restaurant on an empty stomach and try as much of the menu as possible. Every item on the menu is unique and delicious. Although many can finish the fixed menus entirely, if you think you won’t be able to, then just order one portion of kaburga dolma or sac tava.
The restaurant also takes orders, but asks that you make them one day in advance. The ayran, served in a copper dish, is absolutely amazing. The irmik tatlısı with ice cream is very delicious and is the best example of a dessert that incorporates hot and cold elements in one.
